{#306} – Pound Cake Favor – For many, many years I have baked a five-flavor pound cake that has been a favorite of many. Several years ago, without explanation or warning, every single five-flavor cake I made had heavy, or sad streaks, in it. I’m talking you could bounce these cakes off the floor they were so rubbery. I have been so disgusted over it that I ceased making them after I had to throw my last one out. Last week I decided to spend some time on the internet doing research on why my pound cakes were disasters. It makes my heart so happy to say that I have found my problem. Eggs have protein in them, and I was beating the batter too much after adding the eggs and breaking down the proteins. I now am beating at low speed, and just long enough to barely incorporate the eggs and flour. Once the eggs and flour are added, I remove the beater from the mixer, and stir the batter by hand until the lumps disappear. Voila! Beautiful five-flavor pound cakes.  I cannot even tell you how much joy I have in being able to once again bake this cake.

{#307} – Chili and fire – On Friday last week, Greg and I hosted 10 out of 14 of the Young Harris College women’s basketball team for supper. Our sweet Bree brought her teammates, and we shared homemade chili, salad, cornbread, and fritos for dinner. After the meal, we moved to the firepit and the girls made s’mores. It was a great evening, and Greg and I were so blessed to spend time with these young women.

{#310} – Being the Hands and Feet of Jesus – My friend, Jennifer Lee, gave her blog readers the opportunity to help a precious woman in Haiti have a safe and warm home for the first time. My heart was so blessed to read that the home will be built with the money that was donated. Adeline will have a home that is not melting away.
